Comfort food may mean something different to each of us, but invariably it conjures up the smells, sounds and memories of being at home in the kitchen. For my Jewish friends from Syria, it's spinach jibn for weekday breakfast, hot, freshly fried leek pancakes on Rosh Hashanah, the Jewish New Year, and kibbeh on Shabbat, the Sabbath. For my Jewish friends from Israel, it's chocolate and hazelnut rolls for tea, shakshuka on weekdays, and stuffed peppers for Shabbat dinner. For my Jewish family from the U.S., it's a piece of noodle kugel for a post-Yom Kippur burial, chicken soup with matzo dumplings and lots of dill for Passover, and sweet and sour meatballs for no special occasion. Chef and TV personality Pati Ginich once told me, "If a cuisine doesn't evolve, it disappears." Jewish cuisine continues to change, adding new dishes and reinventing itself - and it's so great that we live in a time when people enjoy eating, enjoying food and talking about it. I've been an editor at The Nosher for 10 years now, and every day I try to tell the story of the Jewish people through food - and I take that task seriously both at work and in this book.
