This book opens the "Cooking with Wild Plants" series, dedicated to edible wild trees, shrubs, herbs, ferns, algae, mushrooms, and lichens found throughout Russia. The series' primary goal is to guide readers through the diversity of edible wild plants, explain which parts of these organisms can be collected, and demonstrate the best methods for harvesting and culinary processing. This publication is a popular reference and does not require any specialized knowledge of botany. This volume describes woody plants of Russia (trees, shrubs, and vines) that have edible fruits, buds, and flowers, green parts (buds, leaves, shoots), bark, and sap, or contain edible resinous and sugary secretions.
