The book is a Collection of technological standards, contains more than 850 recipes and is the best revision of all previously published collections on a similar topic. Taking into account changes in the public catering sector and the introduction of new criteria for assessing individual indicators of technological modes, changes and additions have been made to the Collection. In particular, Labzina's methodology is included (see Appendix No. 4), calculation of the nutritional and energy value of dishes.
