The world famous culinary dictionary Larousse gastronomique has been published in France since 1938 by the encyclopedic publishing house Larousse, founded in Paris in the middle of the XNUMXth century by Pierre Larousse. The latest edition of the dictionary, edited by Joel Robuchon, formed the basis of the Russian edition of the Larousse Encyclopedia of Gastronomy.
This edition of the updated 1st volume (in 2 books) is supplemented with comments by the scientific editors of the Russian-language edition on the French articles, as well as original articles prepared specifically for this edition.
For the new edition, more than 80 graphic botanical illustrations of edible plants and mushrooms were made, as well as drawings of fish, over 1000 photographs of dishes, products, technological step-by-step photographs, as well as portraits of famous chefs, writers, historical figures, whose lives are closely connected with cooking .
The 1st book of the 1st volume includes dictionary entries for the letters A-B - from Abbe de Belloc to the Basque Country.
The 2nd book of the 1st volume includes articles with the letter B - from the Basmati to Buchron.
Most of the articles are accompanied by recipes that have become classics of international cuisine. Some of the dictionary entries are supplemented with information tables.
